Stachyose is a natural functional oligosaccharide, most abundantly found in Chinese artichoke (Stachys sieboldii) of the Lamiaceae family. It is directly utilized by intestinal microorganisms upon ingestion, promoting the proliferation of beneficial bacteria such as Bifidobacterium and Lactobacillus, and is recognized as a "Superior Bifidogenic Factor".
With a sweetness level equivalent to 22% of sucrose, stachyose offers excellent water solubility, a clean taste without off-flavors, and high thermal stability.
