Fructooligosaccharides (FOS) are produced from sucrose as the sole raw material through transformation and refinement using advanced bioengineering technology—specifically, fructosyltransferase. Naturally occurring and enzymatically synthesized FOS exhibit an almost linear structure.
As a non-reducing sugar, FOS closely resemble sucrose in key physical properties, including viscosity, water activity, moisture retention, and thermal stability. They also demonstrate high processability under acidic conditions, making them suitable for a wide range of food applications.
