Chitosan oligosaccharide (COS) is an oligosaccharide obtained by degradation of chitosan, an animal-derived prebiotic sourced from shrimp and crab shells.

Refers to oligosaccharides and their salts with DP ≤ 10, constructed from glucosamine and/or N‑acetylglucosamine connected by β‑(1,4) glycosidic bonds. Features higher water solubility and stronger biological activity compared with chitosan. COS can work synergistically with plant-based prebiotics.
