Xylitol

Xylitol is a functional sweetener, usually extracted from corn cobs. It has a sweetness comparable to sucrose and a cool taste. Xylitol is not metabolized by cariogenic bacteria in the oral cavity, so it does not produce acid to corrode teeth. It has a significant anti-caries effect and is widely used in sugar-free chewing gum. Its blood glucose response is much lower than that of sucrose, making it suitable for diabetics and people on a low-sugar diet. Xylitol also has good thermal stability, heating does not cause Maillard Browning reaction, and can be used in baking, candies, and meal replacement foods for diabetics, among other things.

Function

  • Anti‑caries effect

Xylitol cannot be fermented by oral cariogenic bacteria to produce acid, thus preventing demineralization of tooth enamel.

Xylitol enters cells and is metabolized through insulin‑independent pathways. 

It does not trigger sharp blood‑glucose fluctuations after consumption, 

making it a safe sucrose alternative for diabetics and people with impaired glucose tolerance.

Xylitol supplies around 60 % of the calories of sucrose and is absorbed more slowly by the human body. 

Used as a sugar replacer, it effectively lowers the calorie content of finished foods.
