Crystalline fructose is high‑purity natural monosaccharide in white crystalline or powder form. It is 1.2‑1.8 times sweeter than sucrose, with enhanced sweetness at low temperature. Its fast‑coming and quick‑fading sweetness preserves original fruit and milk flavours of food. High water solubility is maintained even under cold conditions, avoiding sugar recrystallization and rough texture in confectionery and baked foods. Superior moisture‑locking performance suppresses starch retrogradation and water migration to keep soft texture.
